Corn and Tomato Salsa

It’s summer, and busy. This quick recipe takes advantage of high-summer corn.

Corn and Tomato Salsa

2 large ears of shucked corn
1 tsp. corn or other vegetable oil
1/8 tsp. cumin seeds, toasted
1 medium to large tomato, seeded and diced
1 large scallion, sliced
1 jalapeno chili, de-seeded and finely chopped
¼ tsp. finely chopped garlic
2 Tbs. chopped cilantro
1 Tbs. honey
2 Tbs. lime
salt
to finish: trickle of good olive oil

Grilled Native Corn on the Cob

Summer comes to an official end this week, but it’s still mild enough to barbecue, and tomatoes and corn and other summer vegetables are in plentiful supply. So, for this week’s recipe, here’s a way to grill corn from Andrea Norris’ new book, From Val’s Cape Cod Kitchen: Recipes For Comfort and Pleasure. It’s great for a late-season get-together with family and friends. Look for corn at the market and at local stands, such as Andrew’s Farm.

Fresh Corn Chowder

We’re still in corn season, so here’s another corn recipe – for a fresh corn chowder, slightly tweaked.

2 cups or so corn kernels (from 2-3 ears corn)
1 medium onion, finely chopped
2 Tbs. butter, plus 2 tsp.
2 red potatoes, washed and diced
salt, paprika to taste
1/2 cup heavy cream
1 Tbs. chopped fresh cilantro

Corn Fritters

These deliciously simple fritters are good on their own as appetizers and nice with bacon or smoky ham for breakfast. Cutting kernels off the cob is easy; stand the ear upright in a shallow bowl and, using a small sharp knife, cut downwards to strip kernels from the cob.

1 1/2 cups unbleached all-purpose flour
1 Tbs. baking powder
3/4 tsp. sea salt
1 egg, beaten
2 to 2 1/2 cups fresh corn kernels (approx 2 ears)

Fresh Corn Pancakes

Makes about 16 small pancakes

1 cup corn kernels (2 ears, shucked, with silk removed)
3 tbs. chopped scallion or onion greens
1 tsp. minced jalapeño (or pinch dried red pepper flakes)
1 ½ tbs. finely minced red or green bell pepper
1 tbs. minced fresh cilantro
1 egg, separated
¼ tsp salt, pinch of cumin seed
2 tbs. flour
1 tbs. butter, 1 tbs. peanut or corn oil, or more as needed
